Health in a plate (starring Avocados and Apples)

Here is how you build an impromptu hearty salad without even glancing at a lettuce leaf.

First things first, you need to choose the star of the dish. And you do that by narrowing your eyes and studying your vegetable racks. What veg do you have a-plenty? Which one you'd rather use asap or it will soon go off?


Which veg is it going to be?

Let’s say you have some avocados, maybe 4 or 5, that are about to get all mushy. Make them the star of your recipe. Avocado, full of amazing healthy fats will be the main ingredient and everything else will revolve around it. Peel, slice and put in bowl. Put in the pip as well, so the avocado won't brown.

Next we start pairing up the best supporting acts to go with it. Avocados have a creamy texture with a buttery, slightly nutty taste. So you want something which compliments that in an opposite way, something crunchy with tangy elements, such as ... apples. Chop two apples in bite-size pieces and throw in with the avocados.



Apples? Yes. Apples.

Next up, supporting actress. This is the one which will delivery the lines for protein. Think feta or haloumi whichever you prefer. This will help you feel satiated and will give you the much needed protein for your muscles.


Then for the movie extras: add some edamame beans, chopped hazlenuts and chia seeds. And for a bit of drama you can also add ... tada! ... pomegranate.

A touch of drama

Voila! Your salad is ready. Add some olive oil, some sherry vinegar, salt and pepper and mix everything together. It takes all of 15 minutes to prepare and it can stay in the fridge for 3 days. A salad worthy of an Oscar!
